Keeping Cool in the Kitchen – Fumi Salad

Confession time. Truth is I don’t like the heat. And that’s putting it mildly. If I’m going to be truly honest, I hate the hot weather. Loathe … there’s a good word to describe how I feel about temperatures over about 80 degrees.

The weather here has been warming up and that leads me to look for easy ways to do all the things that warm up the house. Cooking for instance. Since I don’t have air conditioning, any meal that requires the stove or the oven becomes a no-go when it gets too hot.

This easy salad has been in my family for quite some time now and is still a favorite. It’s easy to mix up and is just as good the next day. I’ve seen the recipe called different things, but we just call it Fumi Salad.


1 head of cabbage, shredded (I just use a bag of the pre-shredded slaw mix)
2 packages of ramen noodles (Oriental or chicken)
1/2 c sesame seeds
4-6 green onions, chopped
3/4 cup slivered almonds
1 tablespoon butter or margarine
1- 2 packages pre-cooked chicken strips

Melt the butter in a pan. Add the sesame seeds and almonds. Sauté until brown. Let cool. (You can add them without browning them, but this is one time it’s worth turning the stove on for a few minutes.) Mix cabbage, onions and then add sesame seeds, almonds and the ramen noodles (uncooked and crunched up.)

For the dressing:

1/4 cup sugar
1 tsp pepper
2 tsp salt
3/4 cup oil
1/3 cup rice vinegar
1 package ramen noodle seasoning

Mix together and then toss with the salad.

I have a large Tupperware bowl that I put everything in, pour the dressing on, and then put the lid on and shake!
