Quinoa and Cilantro Salad

One of my quick, go-to foods is quinoa. I love that its a complete protein by itself. Also, that its like a blank canvas in that it picks up whatever flavor youve chosen to go with it.

I found this simple little recipe on Summer Harms blog last year. She described it as tasting like Chipotles corn salsa which I love and crave. I had to give this one a try. Its so simple and can be eaten warm or straight from the fridge.


Quinoa and Cilantro Salad


1 cup quinoa, uncooked
½ cup cilantro
2 large carrots 
¼ cup frozen, thawed corn
3 T. olive oil
a few squeezes of lemon
2 large cloves garlic
1 to 2 T. minced red onion
½ tsp. salt, or more to taste
Cook the quinoa according to the instructions on the package. Mix the dressing and toss with the quinoa, corn and carrots.

    Looks yummy and easy!! I have a small rice steamer that I cook quinoa in…it’s so easy!
