Decadent Potluck Fare

One of the downfalls of being single is that we often end up being asked to bring utensils and paper plates to potlucks. Either by our own choice or because it’s assumed we don’t know how to cook or we don’t want to cook. For some of us that is true, but I, for one, enjoy an opportunity to pull out some of my culinary skills.

I have a few tried and true recipes that can wow the crowd and I usually turn to them when a potluck comes along. Today I thought I’d share with you one of my favorites that is so simple to make and yet is so decadently good.

This recipe came to me without a name so I’ve taken to calling it Triple Chocolate Cake.

1 box devil’s food cake mix
1 small box instant chocolate pudding
6 oz chocolate chips
4 eggs
1/2 cup oil
1/2 cup water
1 cup sour cream (not non-fat) 

Mix together all the ingredients except the chocolate chips and the pudding mix. Once everything is incorporated, add the dry chocolate pudding mix, stirring until mixed. Stir in chocolate chips.

Bake in a greased Bundt pan at 350 degrees for 35-45 minutes.

It’s as simple as that. And because this cake is so moist and yummy you can get away without frosting it. If I feel like it needs something, I will sprinkle some powdered sugar over the top before serving or I will make a simple glaze of powdered sugar mixed with some milk.
